Bright, zesty, and refreshing passion fruit is balanced with hints of bitterness and deep, complex citrus notes from sun dried and aged tangerine peels which is a traditional Chinese preservation method. These flavors check ALL the boxes (sweet, tart, a dash of bitter, a little salt). It tastes like sunshine rays in a chocolate-bar-form!
This bar made with one-of-a-kind Valrhona couverture chocolate (32.8% cocoa butter) where cocoa is replaced with powdered passion fruit which makes it naturally dairy-free. Blended with pulverized, slowly dried and aged tangerine peels to a fine powder and mixed with my special blend of spices traditionally used in preserved Chinese tangerine peel candy (subtle hints of licorice, star anise, cumin, salt, and cinnamon), this harmony of flavors taste like a bright and sunny afternoon hanging out with grandma in her living room (she's the best).
