The Petite Four is a whimsical take on an old classic. Petit Four (puh-Tee for) is a bite-size treat from France which translates to “small oven.”
During the 18th and 19th century, large brick ovens were heated to high temperatures to bake goods throughout the day. When baking ended for the work day, pastry chefs would take advantage of the stored heat of the ovens and use the residual, more delicate heat, for baking pastry.
